Beef & SA Gold stew

Ingredients

1 bottle (500ml) Brains SA Gold
2 tablespoons olive oil
800g diced beef
60g flour
1 onion
1.5kg casserole vegetables
2 tablespoons tomato puree
1g thyme
500ml chicken stock
140g dumpling mix
75ml water
8g thyme

How To Make

Heat 1 tablespoon olive oil in a large pan.
Dust the diced beef with 60g plain flour, then brown the meat in the pan, remove and set aside.
Using the same pan, heat another tablespoon olive oil, then add 1 onion, peeled and sliced and 1.5kg of casserole vegetables. Cook over a medium-to-high heat for 5-10 minutes.
Stir in 2 tablespoons tomato puree, 4g thyme and add the beef back to the pan.
Pour in 500ml of chicken stock and 1 bottle of Brains SA Gold, bring to the boil, then cover and simmer for 2 hours, removing the lid for the last 30 mins.
Meanwhile, mix together 140g of dumpling mix with 75ml water and 4g thyme, then bring together and roll into 8 balls.
Place the dumplings on top of the stew, the cover and simmer for another 30 minutes for a tasty meal for six.
