Dark Burrito

Ingredients

8 pork sausages, skins removed
1 tbsp olive oil
1 red onion, finely chopped
2 cloves garlic, crushed or finely chopped
1 tsp cumin seeds or grnd cumin
1tbsp ground coriander
1 tsp dried oregano
2 tsp hot chilli powder
salt & pepper to taste
1 can refried beans
100ml Brains Dark
185ml sour cream
Grated cheddar cheese

How To Make

Heat the oven to 180ºF, 350ºC, Gas Mark 5.

Heat the refried beans and Brains Dark over a high heat until the Brains Dark has reduced. Place to one side.

Fry the onion and garlic in the oil for 2-3 minutes and add the sausage meat. Fry for 5 minutes.

Add the cumin, coriander, oregano, chilli powder and season to taste.

Add the refried beans and set aside to cool.

Divide the mixture between the open tortillas, fold and place in a shallow ovenproof dish.

Cover with sour cream and cheddar cheese and bake for 20-25 mins.

Serve with nachos, guacamole and salsa and the rest of your Brains Dark.
